7. Apple vanilla pancakes

An apple a day keeps the doctor away, so why not put the apple in your pancakes?

Morning! And happy Pancake day.... You probably have your own favourite pancake recipe, but if you haven't you could try one of these..... ???????? The first is a basic pancake recipe and the second has the addition of vanilla seeds or vanilla extract, a little sugar and finely sliced eating apples....???? Recipe 1 100g plain flour Pinch of salt 1 medium free range egg 300ml milk or half milk and half water Recipe 2 120g plain flour Seeds from 1 vanilla pod or 1tsp of vanilla extract 1tbsp fine caster sugar 2 medium free range eggs 300ml milk 2 tbsp water Eating apples, cox's apples were good, finely sliced on a mandolin slicer. Sift the flour into a mixing bowl, add the other ingredients and whisk in the milk/ water. Leave to stand for 20/30 minutes. Heat a non stick frying pan/skillet. Add a little butter or clarified butter to evenly coat the pan. If using the sliced apples put 5 to 6 slices into the pan now. Take a ladleful of the batter and pour in enough to thinly coat the base of the pan, tipping the pan as you go. Fry until golden brown and then turn the pancake and cook again for a couple of minutes again until golden brown. Serve directly onto a plate and sprinkle with caster sugar and freshly squeezed lemon juice. Roll up if liked and eat whilst still hot. Ps: don't throw away the deseeded vanilla pod if using, put it into a jar with caster sugar for the making of vanilla flavour infused sugar.
