Attention all Pancake Lovers! These Banana Chip Pancakes from Blake @thegourmetpeasant are perfect for breakfast, brunch, lunch, or dinner! They have the perfect flavor and texture. I took this picture before drizzling with a little bit of pure maple syrup and devouring them! BANANA CHIP PANCAKES 1 cup flour 1 tablespoon baking powder 1-1/2 tablespoons granulated sweetener 2 smashed bananas 1 egg 1 teaspoon vanilla 1/2 cup unsweetened almond milk 1/2 cup chocolate chips In a large bowl, combine the dry ingredients (the first 3). In a 1 cup glass measuring cup, measure the almond milk, then add the egg and vanilla; stir. Pour into the bowl, add bananas and chips. Stir to mix. Scoop 1/4 cupfuls of batter onto a preheated griddle coated with cooking spray or coconut oil. Cook a few minutes on first side, then flip and cook 2-3 minutes more. Makes 8-9 generous sized pancakes. ENJOY!!!
