Chocolate Honey JDTH Cupcakes with Honey Cinnamon Buttercream

Ingredients

• 1 cup all-purpose flour
• 1/4 cup + 2 Tbsp. cocoa powder
• 1 cup granulated sugar
• 1 tsp. baking soda
• 1/2 tsp. baking powder
• 1/2 tsp. kosher salt
• 1 egg
• 1/4 cup strong coffee (cooled)
• 1/4 cup Jack Daniel’s Tennessee Honey
• 1/2 cup buttermilk
• 1/4 cup vegetable oil

For the frosting – Honey-Cinnamon Buttercream Frosting

• 3 cups SIFTED confectioners’ sugar
• 1 cup (2 sticks) unsalted butter, softened
• 3 Tbsp. honey
• 1/2 tsp. ground cinnamon (or more to taste)

Directions

Preheat oven to 350 F and prepare for 12 cupcakes.

• In a large bowl, combine the flour, cocoa power, sugar, baking soda, baking powder and salt.
• In another bowl, combined the egg, coffee, whiskey, buttermilk and oil.
• Pour the egg mixture into the flour mixture and combine until smooth.
• The mixture will be runny, but divide into the 12 prepared cupcake liners. They will crown nicely when baked.
• Bake in preheated oven about 18 minutes until cake tester comes out clean.
• Cool completely before frosting.

For the frosting

• Crème the butter and slowly add the confectioners’ sugar, stopping to scrape and incorporate as necessary.
• Add the honey and beat at medium speed until light and fluffy.
• Reserve a bit to be colored for the bee body (yellow and brown).
• Add the cinnamon and mix until incorporated.
